Decadent Chocolate Cake!
The holidays are around the corner and comfort food is in the air. How many of you start preparing recipes for the holidays nice and early? You know what I mean. Picking and choosing which recipe will be utilized on which holiday is one of my highlights of the year. I love thumbing through recipes and creating menus. This year I bought a new recipe book to help with the fun. I purchased David Venable’s In the Kitchen With David, Comfort Foods That Take You Home cookbook and I am glad I did. I found tons of comfort food recipes but one recipe definitely stood out. David’s Chocolate Cake! Ooooo if you watch David on In the Kitchen With David, you know I am doing the “happy dance” right now. This cake is amazing. It was so amazing that I made it without icing. David gives a delicious icing icing recipe but I am a fan of icing less cake. Imagine leaving this cake for Santa instead of cookies this year. Dry Ingredients:
- 2 1/2 cups of all purpose flour
- 1 1/2 cups of unsweetened cocoa powder (not Dutch process)
- 2 tsp baking soda
- 1 tsp baking powder
- 1 1/4 tsp salt
- 3/4 cup of vegetable oil
- 3 cups of sugar
- 3 large eggs
- 1 1/2 tsp of vanilla extract
- 1 1/2 cups of buttermilk
- 1 1/2 cups of warm coffee
Beat the wet ingredients until creamy and light.
Add the 1/3 of the dry ingredients to the bowl. Beat the ingredients and add 1/3 cup of the buttermilk. Beat the ingredients and add 1/3 cup of the warm coffee. Continue this process until all remaining ingredients have been used.
Bake the batter on 350 degrees for 40-50 minutes or until a toothpick inserted in the middle comes out clean.
David Venable was kind enough to enclose a delicious icing recipe complete with tons of chocolate but I chose to make my cake without icing. I think it will be a great after dinner nibble of deliciousness. If you want the recipe for the icing, I highly suggest purchasing In The Kitchen With David’s Comfort Foods That Take You Home!
