Good Cook sent me some fun kitchen tools and asked me to come up with a “comfort food” one pot dish.
So, I immediately though Pot Roast! This was something my Mom cooked on Sundays or special occasions, so I would consider that comfort food and it’s cooked in one pot, so Bingo!
I wanted to use as many of the new tools as I could but, wasn’t sure what I would do with the SMART Ice cream scoop they sent me (because we are sugar/fructose free) but it was perfect for the dessert Hubby made! He made Sugar-Free Banana Ice Cream that was too totally awesome!
Normally I don’t care for an ice cream scoop – I have had them in the past and they were more trouble than they were worth. But, I do like the different design and the way it works. I didn’t get to try it on hard ice cream but, they say it makes perfect balls of ice cream which would be great for cones!
The Flip Measuring spoon came in very handy for this recipe in measuring out the spices. I am bad about just dumping spices in in some dishes and then regretting it later! I love that it takes up much less space than other measuring spoons I have used. It’s so cool too because it has pockets that you flip out to make it a different size, and you can use it for solid or liquid ingredients. I really hate to use a bunch of measuring devices to make sure I have a wet measure and a dry measure device, this does both.
Safe-cut Can Opener – I didn’t use this in my pot roast as everything in it is fresh, but I do love to have a hand held can opener that I can use when I don’t want or need the electric. It’s easy and small so I can carry it with me if needed and I always love a can opener that removes the lid instead of cutting the lid to make sure no one cuts themselves on the sharp can. I haven’t had a chance to use it’s other features yet , but love that it comes all in one with a bottle opener, cap twister, and tab puller!
I didn’t use any eggs in this recipe but, I can’t wait to try out the Egg Separator. It looks so sturdy and easy to use! It would be perfect for your next egg white omelet!
I think my favorite gadget they sent was the Pot Clip Holder – this little gadget was fun to use. I cooked my pot roast in the crock pot and was happy to find that this even worked on my crockpot! You know how you have to have a spoon rest or get sauce on the stove, or have to rinse your spoon before you can set it down? Well, this spoon rest solves that problem – you can attach your spoon to the pot and it drips right back into the sauce and you never have to look around and wonder where you put that spoon either! Love This One!
So, on to the roast! I made enough for 3 people as that is all we have left at home right now.
I always sear off my roast before I place it in the crockpot or whatever pot I am using. I heat the pan and olive oil and then place my roast in the pan to sear it. Just browning it on either side and I hold it up on the edges to make sure there is no red left before I place it in the pot. I season it with salt and pepper while searing.
Also before I put the roast in I prepare a base for the roast in the crockpot. I usually use Lipton Onion Soup Mix, but since Hubby and I have gone Sugar/Fructose Free, we found that the soup mix had sugar in it (everything does almost :/). So, we found L.B. Jamison’s Beef Flavored Soup Base did not, so that’s what I used and really liked it!
So, I put in 6 cups of water and about 3 tablespoons of soup base and turned it on high in the crockpot while I was searing the roast.
Once I finished searing the roast I placed it in the crockpot and I used the same oil to sauté the chopped onions a bit, just until soft.
Then I cut up the carrots and potatoes and snap the ends off the green beans and snap them in to 2-3 pieces. Then add them all to the pot.
After I place it all in the crockpot I let it cook all day and then dish it up for dinner with a salad and maybe some bread!
Oh and don’t forget Hubby’s homemade Sugar Free Banana Ice Cream.
