Oreo Cookie Truffles!
Susan is back with another yummy recipe!
Today I made some great little Oreo Cookie Truffles that I could share with some friends. I found the recipe on a Just a Pinch website and it seems to be a fairly common recipe as they had several listed with the basic same ingredients.
The one I chose belonged to Shannon Smith. They are so easy to make, taste great and look festive. Great Christmas treat!
One of the things I like about this recipe is that it has 3 ingredients, not counting the sprinkles.
I think it would be just as good using vanilla cream sandwich cookies and dipping chocolate.
Oreo Cookie Balls (or Truffles)
1 package lowfat Oreo Cookies (any sandwich cookie would taste good)
1 8 oz box Light cream cheese
Almond Bark (about 20 oz)
Sprinkles (optional)
In a food processor, pulse your cookies until they become crumbs.
Soften cream cheese to room temperature.
Add to Oreo crumbs and pulse until blended.
This will look very chocolaty.
Put in the refrigerator for about 15 minutes.
Then roll them into balls and set them back in the fridge until well chilled (maybe 30 minutes).
While chilling these, melt the almond bark in the microwave.
Make sure you don’t scorch it so cook it in 30 second intervals.
Then roll each ball into the almond bark and set on wax paper while they harden.
Do about 6 and then sprinkle them before they do harden.
Aren’t they cute? Plus, they taste divine!
